A standard charcoal-fired shichirin made from diatomaceous earth from the Noto Peninsula (Nanao City, Ishikawa Prefecture).


■ What is diatomaceous earth?

Diatomaceous earth is a soil formed by sinking and depositing the remains of phytoplankton that occur in freshwater and seawater as they are on the seabed and lakes long ago. It occupies about 3/4 of the soil of the Noto Peninsula, and the Noto Peninsula is a peninsula made of diatomaceous earth. Diatomaceous earth has innumerable holes when viewed under an electron microscope. And when this hole is baked, it becomes a fine pore inside, making it the best material for a stove with excellent heat insulation.
